Directions

Step 1

Line a pascha mold or small fine-mesh strainer with damp cheesecloth, ensuring the edges hang over the sides. Place a bowl underneath to catch any liquid.

Step 2

In a large bowl, press the farmer's cheese through a fine sieve, or process it in a blender or food processor until smooth.

Step 3

In a separate bowl, beat the softened butter with sugar using a mixer until light and fluffy, about 3-4 minutes.

Add the egg yolks, one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

Slowly heat the heavy cream in a saucepan over medium-low heat, stirring constantly, until warm (do not boil). Gradually add the cream to the egg mixture in small increments, mixing well to avoid curdling.
