Ingredients

  • 2 pounds Yukon Gold potatoes
  • 0.75 cup Ranch dressing
  • 0.5 cup Mayonnaise
  • 0.5 cup Cooked bacon, crumbled
  • 3 pieces Green onions, sliced
  • 2 tablespoons Fresh dill, chopped
  • 1 cup Celery, finely diced
  • 1 tablespoon White vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper

Directions

Step 1

Fill a large pot with water and bring it to a boil. Peel the Yukon Gold potatoes if desired, and cut them into bite-sized chunks.

Step 2

Add the potato chunks to the boiling water and cook for 12-15 minutes, or until they can be easily pierced with a fork. Do not overcook to avoid them falling apart.

Step 3

Drain the cooked potatoes and immediately sprinkle them with the white vinegar while they are still warm. Set them aside to cool completely.

Step 4

In a large mixing bowl, combine the ranch dressing, mayonnaise, salt, and pepper. Stir until smooth.

Step 5

Add the cooled potatoes to the dressing mixture along with the crumbled bacon, sliced green onions, chopped dill, and diced celery. Gently toss to coat everything evenly.

Step 6

Taste and adjust the seasoning with additional salt or pepper, if needed.

Step 7

Cover the bowl with plastic wrap and refrigerate the potato salad for at least 2 hours to allow the flavors to meld.

Step 8

Before serving, give the salad a gentle stir to redistribute the dressing. Serve cold, garnished with extra dill or bacon if desired.
