Ingredients

  • 150 g Unsalted butter
  • 120 g Granulated sugar
  • 50 g Light brown sugar
  • 2 Eggs
  • 150 g All-purpose flour
  • 50 g Breadcrumbs
  • 100 g Ground almonds
  • 1.5 tsp Baking powder
  • 0.5 tsp Cardamom
  • 100 ml Milk
  • 1 tbsp Rum or almond extract
  • 100 g Raspberry jam
  • 60 g Powdered sugar
  • 1 tbsp Water

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a muffin tin with 12 liners.

Step 2

In a large mixing bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy.

Step 3

Add the eggs, one at a time, mixing well after each addition.

Step 4

In a separate bowl, combine the flour, breadcrumbs, ground almonds, baking powder, and cardamom.

Step 5

Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until the batter is smooth but do not overmix.

Step 6

Stir in the rum or almond extract to enhance the flavor.

Step 7

Spoon the batter evenly into the prepared muffin liners, filling each about 2/3 full.

Bake for 18-20 minutes or until a toothpick inserted in the center of a muffin comes out clean.

Remove the muffins from the oven and let them cool completely on a wire rack.
