  • 14.5 oz Diced tomatoes (canned)
  • 15 oz Kidney beans or pinto beans (canned, drained and rinsed)
  • 2 tbsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 cups Shredded cheddar cheese
  • 8 pieces Large flour tortillas
  • 1 tbsp Vegetable oil
  • 0.5 cup Water
  • 1 varied Optional toppings (sour cream, sliced jalapeños, chopped cilantro, hot sauce)

Directions

Step 1

Heat a large skillet over medium-high heat and add the vegetable oil.

Step 2

Add the diced onion and sauté for 3 minutes until translucent. Then, add the minced garlic and cook for 1 more minute, stirring frequently.

Push the onion and garlic to the side of the pan and add the ground beef. Cook the beef, breaking it apart with a wooden spoon, until fully browned and no pink remains (about 5-7 minutes). Drain any excess fat, if necessary.

Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 1 minute to toast the spices and enhance the flavor.

Add the tomato paste to the beef mixture and stir it in well. Cook for 2 minutes to blend the flavors.

Fold the sides of the tortilla in towards the center, then roll it up tightly from the bottom to form a burrito.
