Ingredients

  • 750 grams Potatoes (Yukon Gold or Russet)
  • 300 grams Green cabbage
  • 2 medium Leeks (white and light green parts only)
  • 60 grams Unsalted butter
  • 120 milliliters Heavy cream
  • 150 grams Sharp cheddar cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 2 tablespoons Chopped fresh chives (optional, for garnish)

Directions

Step 1

Peel and chop the potatoes into even chunks for boiling. Place them in a large pot of salted water, bring to a boil, and cook for 15-20 minutes or until fork-tender.

Step 2

While the potatoes are cooking, thinly slice the cabbage into shreds and the leeks into half-moons. Rinse the leeks thoroughly to remove any dirt.

In a large skillet, melt 30 grams of the butter over medium heat. Add the leeks and cabbage, and sauté gently for 6-8 minutes until softened. Season with a pinch of salt and black pepper, then remove from heat.
