Ingredients

  • 1 cup raisins
  • 0.5 cup dark rum
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, melted
  • 0.75 cup granulated sugar
  • 2 eggs
  • 0.5 cup milk
  • 1 teaspoon vanilla extract

Directions

Step 1

Place the raisins in a small bowl and pour the dark rum over them. Let them soak for at least 30 minutes to plump up, then drain and set aside. Reserve the unused rum for later use if desired.

Step 2

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 3

In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt. Set aside.

Step 4

In another bowl, whisk together the melted butter, granulated sugar, eggs, milk, and vanilla extract until smooth and well-combined.

Step 5

Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Take care not to overmix; the batter should be slightly lumpy.

Step 6

Fold the soaked raisins into the batter, distributing them evenly throughout.

Step 7

Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Optional: Brush the tops of the muffins with the reserved rum for an extra hint of flavor. Serve and enjoy!
