Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground turkey
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic cloves, minced
  • 28 ounces canned diced tomatoes
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 1.5 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1.5 teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional)
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • 0 sour cream (optional, for serving)
  • 0 shredded cheddar cheese (optional, for serving)

Directions

Step 1

Heat olive oil in a large pot over medium heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes.

Step 2

Remove the turkey from the pot and set aside. Add the diced onion and green bell pepper to the pot. Sauté until softened, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Return the browned turkey to the pot. Add the canned diced tomatoes, kidney beans, black beans, tomato paste, and chicken broth. Stir to combine.

Step 5

Sprinkle in the chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper (if using), kosher salt, and black pepper. Stir everything together thoroughly.

Step 6

Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot with a lid and simmer for 25-30 minutes, stirring occasionally.

Step 7

Taste the chili and adjust seasoning if needed. If desired, simmer uncovered for an additional 10 minutes to thicken.

Step 8

Serve the turkey chili hot in bowls, garnished with fresh cilantro. Add sour cream and shredded cheddar cheese, if desired.
