Ingredients

  • 6 medium-sized Roma tomatoes
  • 4 Jalapeño peppers
  • 2 Serrano peppers
  • 1 small White onion
  • 4 Garlic cloves
  • 1 cup, loosely packed Fresh cilantro
  • 2 tablespoons Fresh lime juice
  • 2 tablespoons White vinegar
  • 1 teaspoon Kosher salt
  • 0.5 teaspoons Ground cumin
  • 0.25 cup Water
  • 1 tablespoon Vegetable oil

Directions

Step 1

Preheat a large skillet or cast-iron pan over medium-high heat.

Step 2

Add the Roma tomatoes, jalapeño peppers, and serrano peppers to the skillet. Char them on all sides, turning occasionally, for about 10–12 minutes until the skins blister and blacken.

Step 3

Remove the charred vegetables from the skillet and let them cool slightly. Once cooled, remove the stems from the peppers (you can also remove seeds for a milder sauce, but this is optional).

Step 4

In the same skillet, add the vegetable oil and the small white onion (quartered) along with the whole garlic cloves. Sauté for 6–7 minutes until the onion softens and begins to caramelize.

Step 5

Transfer the charred vegetables, sautéed onion, and garlic to a blender or food processor. Add the fresh cilantro, lime juice, white vinegar, kosher salt, ground cumin, and water.

Step 6

Blend the mixture on high until smooth and well combined. If the consistency is too thick, add more water a tablespoon at a time to achieve your desired texture.

Step 7

Taste the sauce and adjust the seasoning if needed. You can add more salt or lime juice to balance the flavor.

Step 8

Pour the hot sauce into sterilized glass jars or bottles and let it cool completely before sealing. Refrigerate for up to 2 weeks.
