Ingredients

  • 4 medium-sized, peeled and diced Potatoes
  • 1 medium-sized, finely chopped Onion
  • 4 cups Chicken broth
  • 3 cups Milk
  • 2 cups, shredded Sharp cheddar cheese
  • 4 tablespoons Butter
  • 0.25 cup All-purpose flour
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 4 slices, crumbled Cooked bacon
  • 2 tablespoons, chopped Green onions

Directions

Step 1

In a large pot, combine the diced potatoes, chopped onion, and chicken broth. Bring the mixture to a boil over medium-high heat, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.

Step 2

While the potatoes are cooking, prepare the roux. In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 2-3 minutes, stirring constantly, until the mixture is smooth and bubbly.

Step 3

Gradually whisk in the milk, ensuring there are no lumps, and cook until the mixture thickens (~3-4 minutes).

Step 4

Once the potatoes are tender, use a potato masher or immersion blender to lightly mash some of the potatoes to create a chunky texture.

Step 5

Stir the thickened milk mixture into the pot with the potatoes and broth. Add the heavy cream, shredded cheddar cheese, salt, and black pepper. Stir until the cheese is fully melted and the soup is creamy and smooth.

Step 6

Taste the soup and adjust seasonings as needed.

Step 7

Ladle the soup into bowls and, if desired, top with crumbled bacon and chopped green onions for extra flavor.

Step 8

Serve warm and enjoy!
