Ingredients

  • 230 grams unsalted butter
  • 150 grams granulated sugar
  • 2 teaspoons vanilla extract
  • 310 grams all-purpose flour
  • 0.5 teaspoons salt
  • 150 grams fruit preserves (e.g., raspberry or apricot)
  • 50 grams coarse sanding sugar

Directions

Step 1

Preheat the oven to 175°C (350°F). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, use a handheld or stand mixer to cream together the butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 3

Mix in the vanilla extract until smooth.

Step 4

Add the flour and salt to the butter mixture, and mix on low speed until a dough forms. The dough should hold together but not be sticky.

Step 5

Roll the dough into 2.5 cm (1-inch) balls and place them 5 cm (2 inches) apart on the prepared baking sheets.

Step 6

Use your thumb or the back of a small spoon to make an indentation in the center of each dough ball. Be careful not to press all the way through the bottom of the cookie.

Step 7

Fill each indentation with about 1/2 teaspoon of fruit preserves. Do not overfill to avoid spilling over during baking.

Step 8

Sprinkle the cookies with coarse sanding sugar for a sparkly finish.

Step 9

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are just starting to turn golden. The centers will remain soft.

Step 10

Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 11

Store the cookies in an airtight container at room temperature for up to 5 days.
