2. Bring a pot of salted water to a boil. Parboil the potatoes for about 7-10 minutes until they are slightly tender but still firm. Drain and allow them to cool completely. Refrigerate for 2-3 hours or overnight for easier grating.

3. Once cooled, grate the potatoes using the coarse side of a box grater. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.
