  • 12 oz penne pasta
  • 8 oz smoked sausage, sliced

  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 14.5 oz (1 can) fire-roasted diced tomatoes
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 handful fresh basil leaves, chopped
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook until browned, about 4-5 minutes. Remove from the skillet and set aside.

Add the remaining 2 tablespoons of olive oil to the skillet. Toss in the sliced bell peppers, red onion, and a pinch of salt. Sauté for about 5-6 minutes, stirring occasionally, until the vegetables are tender and slightly charred.
