  • 100 grams Stilton cheese

  • 8 slices Thinly sliced prosciutto

  • 0.5 teaspoon Black pepper
  • 1 teaspoon Olive oil

Directions

Step 1

1. Preheat a small saucepan over medium heat and add the port wine, honey, and fresh thyme. Bring the mixture to a simmer and cook for 10-12 minutes, or until it reduces by half and reaches a syrupy consistency. Stir occasionally to prevent burning. Once done, set the port reduction aside to cool.

2. In a small mixing bowl, combine the Stilton cheese and goat cheese. Use a spoon to mash and blend them together until well mixed and creamy.

3. Take each fig and make a small incision, slicing it three-quarters of the way through from top to bottom, creating a pocket. Be careful not to cut all the way through.
