Ingredients

  • 4 pieces Red snapper fillets
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 100 milliliters White wine
  • 50 milliliters White wine vinegar
  • 2 pieces Shallots (finely chopped)
  • 200 grams Unsalted butter (cold, cut into cubes)
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Preheat a grill or grill pan to medium-high heat.

Step 2

Brush both sides of the red snapper fillets with olive oil and season with salt and black pepper.

Step 3

Place the fillets skin-side down on the grill and cook for 3-4 minutes per side until the fish is opaque and flakes easily with a fork. Remove from the grill and keep warm.

Step 4

In a small saucepan, combine white wine, white wine vinegar, and shallots. Bring to a simmer over medium heat and reduce until about 2 tablespoons of liquid remain.

Step 5

Reduce the heat to low and begin adding the cold butter cubes to the saucepan, a few at a time, whisking constantly to emulsify the sauce. Continue adding butter until the sauce is creamy and smooth.

Step 6

Stir in the lemon juice and season the beurre Nantaise sauce with additional salt to taste.

Step 7

To serve, place a grilled red snapper fillet on each plate and spoon the beurre Nantaise sauce generously over the top.

Step 8

Garnish with fresh parsley and serve immediately.
