Ingredients

  • 12 pieces Lasagna sheets
  • 2 cups Ricotta cheese
  • 4 cups Fresh spinach, chopped
  • 1 cup Parmesan cheese, grated
  • 1 large Egg
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 3 cups Marinara sauce
  • 2 cups Mozzarella cheese, shredded
  • 1 tablespoon Olive oil
  • 2 cloves Garlic, minced

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil and cook the lasagna sheets until al dente (about 8 minutes). Drain and cool them in a single layer on a baking sheet to prevent sticking.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the chopped spinach and cook until wilted. Remove from heat and let cool slightly.

Step 4

In a mixing bowl, combine the ricotta cheese, cooked spinach, 1/2 cup of grated Parmesan cheese, beaten egg, salt, black pepper, and nutmeg. Mix well to create a creamy filling.

Step 5

Spread 1 cup of marinara sauce evenly across the bottom of a 9x13-inch baking dish.

Step 6

Lay out a lasagna sheet on a clean surface. Spread about 3 tablespoons of the ricotta-spinach filling evenly over the sheet, leaving a small margin along one short edge. Roll the sheet up tightly, starting from the opposite short edge.

Step 7

Place the rolled-up pasta seam-side down into the prepared baking dish. Repeat with the remaining lasagna sheets and filling.

Step 8

Once all the rolls are in the dish, pour the remaining 2 cups of marinara sauce over the top, spreading it evenly to ensure the rolls are covered.

Step 9

Sprinkle the shredded mozzarella cheese over the top of the pasta rolls, followed by the remaining 1/2 cup of Parmesan cheese.

Step 10

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 20 minutes, or until the cheese is bubbly and golden.

Step 11

Remove from the oven and let the pasta rolls rest for 5-10 minutes before serving. Enjoy your Rotoli Di Pasta with a fresh salad or garlic bread on the side!
