Ingredients

  • 1 whole (about 4 lbs) Rotisserie chicken
  • 6 cups Mixed salad greens

  • 1 large Cucumber
  • 1 large Avocado
  • 0.5 medium Red onion
  • 0.5 cup Feta cheese, crumbled
  • 0.25 cup Olive oil
  • 3 tbsp Red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Honey
  • 1 clove Garlic, minced
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Remove the meat from the rotisserie chicken, discarding the skin and bones. Shred or chop the chicken into bite-sized pieces and set aside.

Step 2

Wash and dry the mixed salad greens. Place them in a large salad bowl.

Step 3

Halve the cherry tomatoes and add them to the bowl.

Peel the cucumber, slice it into thin rounds, and add to the salad.
