Ingredients

  • 12 oz Rotini pasta
  • 1 cup Sun-dried tomatoes (packed in oil, drained, sliced)

  • 1 cup Fresh basil leaves (chopped)
  • 1 cup Grated Parmesan cheese
  • 1 cup Cherry tomatoes (halved)
  • 1 tsp Salt
  • 0.5 tsp Black pepper (freshly ground)
  • 0.25 tsp Crushed red pepper flakes (optional)
  • 0.5 cup Pasta cooking water (reserved)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

Stir in the sliced sun-dried tomatoes and cook for 2 minutes, allowing them to release their flavor into the oil.
