Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
Slice the andouille sausage into thin rounds and cook in the skillet for 4-5 minutes, until browned and cooked through. Remove the sausage from the skillet and set aside.
In the same skillet, add the diced white onion and sauté for 3-4 minutes until softened.
Add the minced garlic to the skillet and cook for another 30 seconds, stirring frequently to prevent burning.
Stir in the canned diced tomatoes, chicken broth, smoked paprika, and crushed red pepper flakes. Bring the mixture to a simmer and let it cook for 5 minutes to allow the flavors to meld.

Add the cooked rotini to the skillet and toss to coat the pasta evenly in the sauce. If needed, add a splash of the reserved pasta water to adjust the sauce consistency.
Remove the skillet from heat and sprinkle the dish with chopped fresh parsley and grated Parmesan cheese.
