Ingredients

  • 12 ounces rotini pasta
  • 12 ounces andouille sausage
  • 2 tablespoons olive oil
  • 1 medium (diced) white onion
  • 3 minced garlic cloves
  • 14 ounces (canned) diced tomatoes
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 1 teaspoon smoked paprika
  • 0.5 teaspoons crushed red pepper flakes
  • 2 tablespoons (chopped) fresh parsley
  • 0.25 cup grated Parmesan cheese
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Slice the andouille sausage into thin rounds and cook in the skillet for 4-5 minutes, until browned and cooked through. Remove the sausage from the skillet and set aside.

In the same skillet, add the diced white onion and sauté for 3-4 minutes until softened.
