Peel the potatoes and grate them using the coarse side of a box grater. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible. Set aside.
Dice the bacon into small pieces. Heat a large skillet over medium heat and cook the bacon until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.
Slice the mushrooms and dice the onion. Add them to the skillet with the bacon fat and sauté over medium heat until the mushrooms are golden brown and the onions are soft, about 6-8 minutes. Remove from the skillet and set aside.
In a large bowl, combine the grated potatoes, salt, and black pepper. Mix well.
Heat a non-stick skillet over medium heat and melt 2 tablespoons of butter with 1 tablespoon of olive oil. Add half of the grated potatoes to the skillet and press them down with a spatula to form an even layer. Cook for 5-7 minutes or until the bottom is golden brown.
Flip the rösti by sliding it onto a large plate, placing the skillet upside down over the plate, and flipping the plate and skillet together. Melt another tablespoon of butter in the skillet and slide the rösti back in to cook the other side for an additional 5-7 minutes. Repeat for the second rösti if needed.
Preheat the oven broiler. Place the cooked rösti on a baking sheet. Top with the sautéed mushrooms, onions, and crispy bacon. Grate or slice the Havarti cheese and distribute it evenly over the top.
Place the baking sheet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
Garnish the rösti with chopped fresh parsley before serving. Cut into wedges and serve hot.
