Ingredients

  • 1.5 cups Graham cracker crumbs
  • 0.25 cups Granulated sugar
  • 0.5 cups Unsalted butter, melted
  • 1 can (20 oz) Crushed pineapple, drained
  • 8 oz Cream cheese, softened
  • 0.75 cups Powdered sugar
  • 1.5 cups Heavy whipping cream
  • 1 teaspoon Vanilla extract
  • 1 cup Whipped cream (optional, for topping)
  • 0.5 cups Pineapple slices or chunks (optional, for garnishing)

Directions

Step 1

In a medium mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the texture resembles wet sand.

Step 2

Press the graham cracker mixture into the bottom and up the sides of a 9-inch pie pan to form the crust. Use the bottom of a measuring cup to smooth it out. Chill the crust in the refrigerator while preparing the filling.

Step 3

In a large mixing bowl, beat the softened cream cheese until creamy and smooth, about 2 minutes.

Step 4

Add the powdered sugar and vanilla extract to the cream cheese. Beat until fully incorporated, scraping down the sides of the bowl as needed.

Step 5

In a separate bowl, whip the heavy whipping cream until stiff peaks form. Fold the whipped cream gently into the cream cheese mixture until fully combined.

Step 6

Fold in the drained crushed pineapple until evenly distributed throughout the filling.

Step 7

Pour the pineapple cream filling into the chilled crust, spreading it out evenly with a spatula.

Step 8

Refrigerate the pie for at least 4 hours or overnight to allow it to fully set.

Step 9

Prior to serving, optionally top with whipped cream and garnish with pineapple slices or chunks for a beautiful finish.

Step 10

Slice and serve chilled. Store leftovers in the refrigerator for up to 3 days.
