Ingredients

  • 8 pieces large eggs
  • 1 cup whole milk
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 8 ounces diced green chiles, canned
  • 2 pieces Roma tomatoes, diced
  • 1 medium yellow onion, diced
  • 0.5 cup fresh cilantro, chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup tortilla chips, crushed

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish with nonstick spray or butter.

Step 2

In a medium skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes, until softened and translucent.

Step 3

Stir in the diced Roma tomatoes, cumin powder, paprika, and garlic powder. Cook for 2-3 minutes until the tomatoes begin to break down slightly. Remove from heat.

Step 4

In a large mixing bowl, crack the eggs and whisk them until smooth. Add the milk, salt, and black pepper, and whisk to combine.

Step 5

Fold the sautéed onion and tomato mixture, diced green chiles, and chopped cilantro into the egg mixture.

Step 6

Layer half of the shredded cheddar cheese and Monterey Jack cheese evenly across the bottom of the prepared casserole dish.

Step 7

Pour the egg mixture into the casserole dish over the cheese layer.

Step 8

Top with the remaining shredded cheese and sprinkle the crushed tortilla chips evenly over the top.

Step 9

Bake in the preheated oven for 30-35 minutes, or until the casserole is set in the center and lightly golden on top.

Step 10

Let the casserole cool for 5-10 minutes before slicing and serving. Enjoy warm with a side of salsa or guacamole, if desired!
