Ingredients

  • 1 cup Warm water
  • 2 tablespoons Honey
  • 2.25 teaspoons Active dry yeast
  • 2.5 cups Whole wheat flour
  • 1 cup All-purpose flour
  • 1 teaspoon Salt
  • 2 tablespoons Fresh rosemary, finely chopped
  • 1 Egg
  • 3 tablespoons Olive oil
  • 2 tablespoons Milk (for brushing)
  • 1 tablespoon Sesame seeds (optional)

Directions

Step 1

In a small bowl, combine the warm water and honey. Stir until the honey dissolves, then sprinkle the active dry yeast over the top. Let it sit for 5-10 minutes until foamy.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, salt, and chopped rosemary.

Step 3

In a separate bowl, beat the egg and mix in the olive oil. Add this mixture to the yeast mixture.

Step 4

Gradually pour the wet ingredients into the dry ingredients, mixing with a wooden spoon or dough hook attachment until the dough comes together.

Step 5

Transfer the dough to a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Alternatively, you can knead the dough in a stand mixer for 5-6 minutes.

Shape the dough into a ball and place it in a greased bowl. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 1 hour, or until doubled in size.
