Ingredients

  • 4 6-ounce pieces Swordfish steaks
  • 1 cup Dry white wine
  • 3 tablespoons Olive oil
  • 3 tablespoons Lemon juice
  • 2 pieces Garlic cloves, minced
  • 3 sprigs Fresh rosemary sprigs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Unsalted butter
  • 4 pieces Lemon wedges

Directions

Step 1

In a large bowl or shallow dish, combine the white wine, olive oil, lemon juice, minced garlic, rosemary sprigs, salt, and black pepper.

Step 2

Place the swordfish steaks in the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

Step 3

Remove the swordfish from the marinade and pat dry with paper towels. Discard the remaining marinade.

Step 4

Heat a large skillet over medium-high heat and melt 2 tablespoons of unsalted butter.

Step 5

Once the butter is melted and starts to foam, add the swordfish steaks to the skillet. Sear each side for 4-5 minutes, or until the fish is golden brown and cooked through with an internal temperature of 145°F (63°C).

Step 6

Transfer the swordfish to a plate and let it rest for 2-3 minutes before serving.

Step 7

Garnish with fresh rosemary and serve with lemon wedges on the side.
