Ingredients

  • 2 pounds Russet or Yukon Gold potatoes
  • 1 whole Garlic bulb
  • 1 tablespoon Olive oil
  • 2 teaspoons Fresh rosemary
  • 4 tablespoons Unsalted butter
  • 0.5 cup Whole milk
  • 0.25 cup Sour cream
  • 1 cup Shredded sharp cheddar cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Cut the top off the garlic bulb, exposing the tops of the cloves. Drizzle with 1 tablespoon of olive oil, sprinkle with a pinch of salt, and wrap it in aluminum foil. Roast the garlic in the preheated oven for 30-35 minutes, or until the cloves are soft and golden.
