Ingredients

  • 2 pounds Yukon Gold potatoes
  • 2 tablespoons Fresh rosemary
  • 6 large Garlic cloves
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Unsalted butter (optional)

Directions

Step 1

Preheat your oven to 425°F (220°C).

Wash and scrub the Yukon Gold potatoes thoroughly. Optionally, peel them if you prefer. Cut the potatoes into evenly sized chunks, about 1-2 inches wide.

In a large pot, bring salted water to a boil. Add the potato chunks and parboil for 5-7 minutes until the edges just start to soften. Drain the potatoes and let them cool for a few minutes to dry out.
