Ingredients

  • 500 grams beef fillet
  • 2 sprigs fresh rosemary
  • 4 units garlic cloves
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoons lemon zest
  • 2 tablespoons vegetable oil

Directions

Step 1

Pat the beef fillet dry with a paper towel and let it come to room temperature for about 30 minutes before cooking.

Step 2

Season the fillet generously with salt and black pepper on all sides.

Step 3

In a small bowl, mix the olive oil with finely chopped rosemary, minced garlic, and lemon zest. Rub this mixture evenly over the beef fillet and set it aside to marinate for 10 minutes.

Step 4

Heat a large skillet over medium-high heat and add the vegetable oil. When the oil is hot but not smoking, sear the beef fillet on all sides until it develops a golden brown crust (about 2-3 minutes per side).

Step 5

Reduce the heat to medium-low and add the butter to the skillet. Allow it to melt, then spoon the melted butter over the beef fillet continuously for about 3-4 minutes.

Step 6

Insert a meat thermometer into the thickest part of the beef fillet to check the internal temperature. For medium-rare, aim for 54-57°C (130-135°F). Adjust cooking time depending on your desired doneness.

Step 7

Once cooked to your desired temperature, remove the beef fillet from the skillet and cover loosely with aluminum foil. Let it rest for 10 minutes to allow the juices to redistribute.

Step 8

Slice the fillet into thick medallions and serve hot, garnished with additional rosemary if desired. Pair with roasted vegetables or mashed potatoes for a complete meal.
