Ingredients

  • 1 Baguette
  • 4 tablespoons Olive oil
  • 2 Garlic cloves
  • 1 15-ounce can Canned white beans (such as cannellini)
  • 2 teaspoons Fresh rosemary
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Cherry tomatoes
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the baguette into 1/2-inch thick diagonal slices and arrange them on a baking sheet.

Step 3

Brush each slice lightly with 2 tablespoons of olive oil and bake for 6-8 minutes, or until golden and crisp. Remove from the oven and set aside to cool.

Step 4

Peel and finely mince one garlic clove, then rub the other whole clove over each toasted baguette slice for a hint of garlic flavor.

Step 5

Drain and rinse the canned white beans thoroughly. Add them to a mixing bowl.

Step 6

In a small pan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in the rosemary and remove from heat.

Step 7

Pour the rosemary-infused oil over the white beans. Add the lemon juice, salt, and black pepper, and mash roughly with a fork until combined but still slightly chunky.

Step 8

Dice the cherry tomatoes and finely chop the parsley. Gently fold them into the bean mixture.

Step 9

Spoon the bean mixture generously onto each baguette slice, topping with an extra sprinkle of parsley if desired.

Step 10

Serve immediately and enjoy your Rosemary Bean Bruschetta!
