Ingredients

  • 1 lb ground beef
  • 1 tbsp fresh rosemary
  • 2 tbsp taco seasoning
  • 1 tbsp olive oil
  • 6 cups romaine lettuce
  • 1 cup cherry tomatoes
  • 1 cup canned black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado
  • 1 lime
  • 2 cups tortilla chips, lightly crushed
  • 1 cup sour cream
  • 1 cup salsa
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add the ground beef, breaking it up with a wooden spoon, and cook for 5-7 minutes or until browned.

Step 3

Stir in taco seasoning, fresh rosemary, salt, and black pepper. Cook for an additional 2-3 minutes. Remove from heat and set aside.

Step 4

In a large bowl, combine romaine lettuce, cherry tomatoes (halved), black beans, corn kernels, and shredded cheddar cheese.

Step 5

Dice the avocado and squeeze fresh lime juice over it to prevent browning. Add to the salad mixture.

Step 6

To assemble the salad, layer the tortilla chips on the bottom of a large serving bowl or individual bowls.

Step 7

Top the chips with the salad mixture, followed by the seasoned ground beef.

Step 8

Drizzle with salsa and dollop with sour cream for added flavor.

Step 9

Garnish with additional fresh rosemary sprigs, if desired. Serve immediately and enjoy!
