Ingredients

  • 6 pieces Eggs
  • 0.5 cups Heavy cream
  • 0.25 cups Milk
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper, freshly ground
  • 1 tablespoons Fresh rosemary, finely chopped
  • 1 cups Cheddar cheese, shredded
  • 0.5 cups Cooked bacon, crumbled
  • 0.75 cups Baby spinach, chopped
  • 2 sheets Frozen puff pastry sheets, thawed
  • 1 as needed Nonstick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C) and generously spray a 12-cup muffin tin with nonstick cooking spray.

Step 2

Unroll the thawed puff pastry sheets on a floured surface. Using a round cookie cutter or the rim of a glass, cut out 12 circles slightly larger than the muffin tin cups.

Step 3

Press one pastry circle into each muffin cup, gently molding it to the sides and bottom to form a crust. Place the pan in the fridge while preparing the filling.

Step 4

In a mixing bowl, whisk together the eggs, heavy cream, milk, salt, black pepper, and fresh rosemary until well combined.

Step 5

Add the shredded cheddar cheese, crumbled bacon, and chopped spinach to the egg mixture, stirring gently to distribute evenly.

Step 6

Remove the muffin tin from the fridge and carefully pour the filling into the prepared pastry cups. Make sure not to overfill each cup.

Step 7

Place the muffin tin in the preheated oven and bake for 20–25 minutes, or until the filling is set and the tops are golden brown.

Step 8

Remove the quiches from the oven and let them cool for about 5 minutes in the pan. Use a butter knife to gently release each quiche from the tin.

Step 9

Serve warm or at room temperature. These mini quiches can also be stored in the refrigerator for up to 3 days and reheated before serving.
