Ingredients

  • 4 ears Fresh corn (on the cob or canned)
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 Red bell pepper
  • 0.5 Red onion
  • 0.25 cup Fresh parsley
  • 3 tablespoons Extra virgin olive oil
  • 3 tablespoons Fresh lime juice
  • 1 teaspoon Honey
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

If using fresh corn, bring a large pot of water to a boil and cook the corn on the cob for 5 minutes. Remove and let it cool before cutting the kernels off the cob. If using canned corn, drain and rinse thoroughly.

Step 2

Cut the cherry tomatoes in half, dice the cucumber and red bell pepper into small bite-sized pieces, and finely dice the red onion.

Step 3

Chop the parsley finely and set it aside for garnish.

Step 4

In a large mixing bowl, combine the corn kernels, cherry tomatoes, cucumber, red bell pepper, and red onion.

Step 5

In a small bowl, whisk together the olive oil, fresh lime juice, honey, ground cumin, salt, and black pepper to create the dressing.

Step 6

Pour the dressing over the vegetable mixture and toss gently to combine and coat evenly.

Step 7

Sprinkle the chopped parsley over the salad as a garnish.

Step 8

Taste and adjust seasoning if needed. Serve immediately or chill in the refrigerator for 15 minutes for the flavors to meld.
