Ingredients

  • 6 large Russet potatoes
  • 1 medium Onion
  • 4 tablespoons Butter
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 cup Cheddar cheese
  • 0.5 cup Sour cream
  • 2 tablespoons Chopped parsley (optional)

Directions

Step 1

Peel and slice the russet potatoes into 1/4-inch-thick rounds. Rinse and pat dry.

Step 2

Peel and dice the onion into small pieces.

Step 3

Grease the inside of the crock pot with 1 tablespoon of butter to prevent sticking.

Step 4

Layer half of the potato slices in the bottom of the crock pot. Top with half of the diced onions.

Step 5

Sprinkle 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/2 teaspoon of garlic powder over the layer.

Step 6

Dot with 2 tablespoons of butter cut into small pieces.

Step 7

Repeat the layers with the remaining potatoes, onions, seasonings, and butter.

Step 8

Set the crock pot to cook on high heat for 4 hours or low heat for 6-8 hours, until the potatoes are tender.

Step 9

Once the potatoes are cooked, sprinkle the shredded cheddar cheese evenly over the top. Cover and cook for an additional 10 minutes on high to melt the cheese.

Step 10

Remove the lid, add the sour cream, and gently stir the mixture to combine. Be careful not to break the potato slices.

Step 11

Taste and adjust seasoning if needed. Garnish with chopped parsley before serving, if desired.
