Ingredients

  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 eggs
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon lemon zest
  • 1 cup whole milk
  • 1 cup powdered sugar (for optional glaze)
  • 2 tablespoons fresh lemon juice (for optional glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans, or line them with parchment paper.

Step 2

In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

Using a stand mixer or a hand mixer, cream the softened butter and sugar together in a large bowl until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract and lemon zest.

Step 5

Add the dry ingredients to the wet ingredients in three additions, alternating with the milk, beginning and ending with the dry ingredients. Mix just until combined; do not overmix.

Step 6

Divide the batter evenly between the prepared pans and smooth the tops with a spatula.

Step 7

Bake in the preheated oven for 28-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 8

Remove the cakes from the oven and let them cool in their pans for 10 minutes. Then transfer them to a wire rack to cool completely.

Step 9

If desired, prepare the glaze by whisking together the powdered sugar and lemon juice in a small bowl until smooth. Drizzle over the cooled cakes or serve the glaze on the side.

Step 10

Slice and serve your Rose Kennedy Cake with a cup of tea or coffee. Enjoy!
