Ingredients

  • 1 cup Unsalted butter, softened
  • 0.5 cup Granulated sugar
  • 0.5 cup Light brown sugar, packed
  • 2 Eggs, large
  • 2 teaspoons Pure vanilla extract
  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1.5 cups White chocolate chips
  • 1 cup Dried cranberries
  • 0.5 cup Chopped pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, beat the softened unsalted butter, granulated sugar, and light brown sugar until the mixture is creamy and smooth, about 2-3 minutes using a hand or stand mixer.

Step 3

Add the eggs one at a time, beating well after each addition, then mix in the pure vanilla extract.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

Step 6

Using a spatula, fold in the white chocolate chips and dried cranberries. If using chopped pecans, fold them in as well.

Step 7

Drop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked but will set as the cookies cool.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 1 week, or freeze for longer storage.
