Ingredients

  • 6 large Fresh peaches
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 0.25 cup All-purpose flour
  • 1 tablespoon Cornstarch
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Butter
  • 2 9-inch rounds Refrigerated pie crusts
  • 1 large Egg
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Peel, pit, and slice the fresh peaches into thin wedges. Place the sliced peaches in a large mixing bowl.

Step 3

Add granulated sugar, brown sugar, all-purpose flour, cornstarch, ground cinnamon, ground nutmeg, and vanilla extract to the peaches. Toss well to combine and ensure all the peaches are coated evenly. Set aside for 10 minutes.

Step 4

Roll out one of the refrigerated pie crusts and fit it into a 9-inch pie dish. Trim the edges, leaving about a 1-inch overhang.

Step 5

Pour the peach filling into the prepared pie crust, spreading it evenly. Dot the filling with small pieces of butter.

Step 6

Roll out the second pie crust and place it over the peach filling. You can leave the crust whole or cut it into strips to create a lattice pattern. Trim the edges and seal the top crust to the bottom crust by pinching or crimping with a fork.

Step 7

In a small bowl, whisk the egg and water to create an egg wash. Brush the egg wash over the top crust for a golden finish.

Step 8

Cut a few small slits in the top crust if using a whole crust to allow steam to escape during baking.

Step 9

Bake the pie in the preheated oven for 40–45 minutes, or until the crust is golden brown and the filling is bubbly.

Step 10

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving to allow the filling to set.

Step 11

Slice and serve the peach pie with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
