Ingredients

  • 8 oz Angel hair pasta
  • 2 pieces Chicken breast (boneless, skinless)
  • 3 tbsp Olive oil
  • 2 cloves Garlic (minced)
  • 2 cups Cherry tomatoes (halved)
  • 1 cup Cucumber (diced)
  • 1 small Red onion (thinly sliced)
  • 0.25 cup Fresh parsley (chopped)
  • 0.5 cup Feta cheese (crumbled)
  • 3 tbsp Lemon juice (freshly squeezed)
  • 1 tsp Dijon mustard
  • 1 tsp Honey
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the angel hair pasta and cook until al dente, approximately 4-5 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

Step 2

While the pasta cooks, season both sides of the chicken breasts with a pinch of salt and black pepper.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the pan and let it rest for 5 minutes. Then slice or shred the chicken into bite-sized pieces.

In a large mixing bowl, prepare the dressing. Combine the lemon juice, Dijon mustard, honey, minced garlic, remaining olive oil, salt, and pepper. Whisk the ingredients together until emulsified.

Add the cooked pasta, sliced chicken, cherry tomatoes, cucumber, red onion, and parsley to the bowl with the dressing. Toss gently to coat all ingredients evenly.

Step 6

Sprinkle the crumbled feta cheese over the top and give the salad a final toss.

Chill the pasta salad for at least 15 minutes before serving to allow the flavors to meld together. Serve cold or at room temperature and enjoy!
