  • 1 cup uncooked orzo (rosamarina)
  • 2 cups chicken broth
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 medium zucchini, sliced into half-moons
  • 1 small red onion, sliced
  • 2 cloves minced garlic
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Start by preparing the chicken. Cut the chicken breast into bite-sized pieces and season them with salt, black pepper, and garlic powder.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes until browned and fully cooked. Remove the chicken from the skillet and set aside.

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the rosamarina (orzo) and toast it for 2 minutes, stirring frequently, until lightly golden.
