Ingredients

  • 16 oz penne pasta
  • 3 cups cooked chicken breast, shredded
  • 10.5 oz (1 can) cream of mushroom soup
  • 10.5 oz (1 can) cream of chicken soup
  • 1.5 cups sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 0.5 cup parmesan cheese, grated
  • 0.5 cup bread crumbs (optional for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C). If freezing the dish, skip this step until ready to bake.

Step 2

Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

Step 4

Add the minced garlic to the skillet and cook for an additional 1–2 minutes, stirring frequently to prevent burning.

Step 5

In a large mixing bowl, combine the cream of mushroom soup, cream of chicken soup, sour cream, milk, shredded cheddar cheese, salt, pepper, and Italian seasoning. Mix well until smooth.

Step 6

Stir in the cooked onion and garlic, shredded chicken, and cooked pasta. Mix until all ingredients are evenly coated with the sauce.

Step 7

Transfer the mixture to a greased 9x13-inch casserole dish, spreading it out evenly.

Step 8

If desired, sprinkle the top with grated parmesan cheese and bread crumbs for a crispy topping.

Step 9

Bake uncovered in the preheated oven for 30–40 minutes, or until heated through and the top is golden and bubbly.

Step 10

If freezing, allow the casserole to cool completely before tightly covering with plastic wrap and aluminum foil. Label and freeze for up to 3 months.

Step 11

To reheat a frozen casserole, thaw it overnight in the refrigerator, then bake at 375°F (190°C) for 40–50 minutes, or until hot and bubbly.

Step 12

Serve warm and enjoy your creamy chicken pasta casserole!
