Ingredients

  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, softened
  • 1.25 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup plain Greek yogurt
  • 2 cups apples, peeled and diced (preferably Granny Smith or Honeycrisp)
  • 0.75 cups brown sugar
  • 1 teaspoons ground cinnamon (for streusel)
  • 0.5 cups all-purpose flour (for streusel)
  • 0.25 cups unsalted butter, melted (for streusel)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour a 9x13-inch baking pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Use a hand or stand mixer on medium speed.

Step 4

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

On low speed, add half of the dry ingredients to the wet ingredients, followed by the Greek yogurt. Mix until just combined, then add the remaining dry ingredients. Be careful not to overmix.

Step 6

Fold in the diced apples gently using a rubber spatula.

Step 7

Pour the batter into the prepared baking pan and smooth the surface with a spatula.

Step 8

To make the streusel topping, combine the brown sugar, cinnamon, and flour in a small bowl. Pour in the melted butter and mix with a fork until crumbly.

Step 9

Sprinkle the streusel evenly over the cake batter.

Step 10

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 11

Remove the cake from the oven and let it cool in the pan for about 15 minutes. Then, transfer it to a wire rack to cool completely, or serve warm.

Step 12

Slice and enjoy Rosalia's Apple Coffee Cake alongside a cup of coffee or tea!
