Ingredients

  • 2 large Russet potatoes
  • 2 medium Parsnips
  • 2 medium Carrots
  • 1 medium Turnips
  • 4 tablespoons Unsalted butter

  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion
  • 0.25 teaspoon Granulated sugar
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel the potatoes, parsnips, carrots, and turnip, then chop them into evenly-sized chunks for cooking.

In a large pot, fill with water and add a pinch of salt. Bring the water to a boil over high heat.

Carefully add the chopped root vegetables to the boiling water. Reduce the heat to medium and cook until all the vegetables are fork-tender, approximately 20-25 minutes.
