Ingredients

  • 12 pieces Ronzoni manicotti shells
  • 2 cups Ricotta cheese
  • 2 cups Shredded mozzarella cheese
  • 0.5 cups Grated Parmesan cheese
  • 2 large Eggs
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 3 cups Marinara sauce
  • 0.25 cup Water
  • 1 tablespoon Olive oil or non-stick spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil or non-stick spray.

Step 2

Bring a large pot of salted water to a boil. Add the manicotti shells and cook for 4–5 minutes, just until they are slightly softened but still firm (they will finish cooking in the oven). Drain carefully and rinse with cool water to stop cooking. Set aside.

Step 3

In a large mixing bowl, combine ricotta cheese, 1 1/2 cups of shredded mozzarella cheese, Parmesan cheese, eggs, chopped parsley, salt, and pepper. Mix until thoroughly combined.

Using a piping bag or a resealable plastic bag with a corner snipped off, fill each manicotti shell with the cheese mixture. Be careful not to tear the shells while filling them.
