Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil or non-stick spray.
Bring a large pot of salted water to a boil. Add the manicotti shells and cook for 4–5 minutes, just until they are slightly softened but still firm (they will finish cooking in the oven). Drain carefully and rinse with cool water to stop cooking. Set aside.
In a large mixing bowl, combine ricotta cheese, 1 1/2 cups of shredded mozzarella cheese, Parmesan cheese, eggs, chopped parsley, salt, and pepper. Mix until thoroughly combined.
Using a piping bag or a resealable plastic bag with a corner snipped off, fill each manicotti shell with the cheese mixture. Be careful not to tear the shells while filling them.
Spread 1 cup of marinara sauce evenly over the bottom of the prepared baking dish.
Arrange the filled manicotti shells in a single layer in the dish. Pour the remaining marinara sauce over the shells, making sure each shell is well covered.
Add 1/4 cup of water to the edges of the baking dish (this helps to keep the pasta moist during baking). Cover the baking dish tightly with aluminum foil.
Bake the manicotti in the preheated oven for 30 minutes.
Remove the foil and sprinkle the remaining 1/2 cup of shredded mozzarella cheese evenly over the top. Return the dish to the oven and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.
Let the manicotti rest for 5 minutes before serving. Garnish with additional chopped parsley if desired. Serve hot with a side of garlic bread or salad.
