Ingredients

  • 4 large Carrots
  • 2 medium Zucchini
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 large Red onion
  • 1 pound Baby potatoes
  • 3 tablespoons Olive oil
  • 4 minced Garlic cloves
  • 2 teaspoons, chopped Fresh rosemary
  • 2 teaspoons, chopped Fresh thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with olive oil.

Wash and peel (if necessary) all the vegetables. Cut the carrots, zucchini, and potatoes into 1-inch chunks. Slice the bell peppers into thick strips. Quarter the red onion.
