Ingredients

  • 900 grams fresh green beans
  • 3 tablespoons unsalted butter
  • 1 medium, finely chopped yellow onion
  • 2 minced garlic cloves
  • 3 tablespoons all-purpose flour
  • 360 milliliters chicken or vegetable stock
  • 240 milliliters heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon ground nutmeg
  • 60 grams grated Parmesan cheese
  • 180 grams crispy fried onions

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

Bring a large pot of water to a boil. Add a generous pinch of salt and blanch the green beans for 3-4 minutes until tender-crisp. Drain and immediately transfer the beans to an ice water bath to stop the cooking. Drain and set aside.

Step 3

In a large skillet, melt the butter over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute.

Step 4

Sprinkle the flour over the onions and garlic and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.

Step 5

Slowly pour in the chicken or vegetable stock while whisking constantly to avoid lumps. Once smooth, add the heavy cream, salt, black pepper, and nutmeg. Cook for 3-4 minutes, stirring frequently, until the sauce thickens.

Step 6

Remove the skillet from heat and stir in the grated Parmesan cheese until melted and combined.

Step 7

In a large mixing bowl, combine the blanched green beans with the creamy sauce. Toss until the beans are evenly coated.

Step 8

Transfer the mixture to a 9x13-inch (23x33 cm) baking dish and spread it out in an even layer.

Step 9

Sprinkle the crispy fried onions evenly over the top of the casserole.

Step 10

Bake in the preheated oven for 15-20 minutes, or until the casserole is bubbling and the fried onions are golden brown.

Step 11

Remove from the oven and let it rest for 5 minutes before serving. Enjoy your Ron's Green Bean Casserole!
