Ingredients

  • 16 oz elbow macaroni
  • 12 oz evaporated milk
  • 1.5 cups whole milk
  • 4 oz cream cheese
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 0.25 cup unsalted butter
  • 1 tsp ground mustard
  • 0.5 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 as needed cooking spray

Directions

Step 1

Start by lightly spraying the inside of your crock pot with cooking spray to prevent sticking.

Step 2

Cook the elbow macaroni according to the package instructions, but undercook it by 1 to 2 minutes. Drain and set aside.

Step 3

In a medium saucepan over low heat, combine the evaporated milk, whole milk, cream cheese, and unsalted butter. Stir frequently until the cream cheese and butter are fully melted and smooth.

Step 4

Slowly whisk in the shredded cheddar cheese and Monterey Jack cheese, allowing them to melt completely. Stir until you have a creamy cheese sauce.

Step 5

Add ground mustard, paprika, salt, and black pepper to the cheese sauce. Stir well to combine.

Step 6

Place the drained macaroni into the crock pot and pour the cheese sauce over it. Stir well to ensure the macaroni is evenly coated.

Step 7

Set the crock pot to LOW and cook for 1.5 to 2 hours, stirring halfway through to prevent sticking and ensure even cooking.

Step 8

After cooking, check the consistency. If it looks too thick, you can stir in a splash of warm milk to loosen it up.

Step 9

Serve hot, directly from the crock pot, and enjoy your delicious creamy mac and cheese!
