Ingredients

  • 3 cups cooked white rice
  • 1.5 cups kimchi
  • 3 tablespoons kimchi juice
  • 2 tablespoons gochujang (Korean red chili paste)
  • 1 tablespoon soy sauce
  • 1.5 tablespoons toasted sesame oil
  • 2 tablespoons vegetable oil
  • 2 units garlic cloves, minced
  • 4 units scallions, chopped (divided use)
  • 2 units fried eggs (optional, for topping)
  • 1 tablespoon toasted sesame seeds (optional, for garnish)
  • 1 sheet nori sheets, cut into strips (optional, for garnish)

Directions

Step 1

Prepare all ingredients before starting—chop the kimchi, mince the garlic, and slice the scallions, dividing the white parts from the green tops.

Step 2

Heat a large skillet or wok over medium-high heat and add the vegetable oil.

Step 3

Once the oil is hot, add the minced garlic and white parts of the scallions. Stir-fry for about 30 seconds until fragrant.

Step 4

Add the chopped kimchi to the pan and stir-fry for 2-3 minutes until it begins to caramelize slightly.

Step 5

Lower the heat to medium. Add the kimchi juice, gochujang, and soy sauce to the pan, stirring well to combine.

Step 6

Add the cooked white rice to the skillet. Use a spatula to break up any clumps and mix thoroughly with the sauce and kimchi.

Step 7

Drizzle the toasted sesame oil over the rice and stir well to evenly coat all the grains.

Step 8

Cook for another 3-4 minutes, stirring occasionally, until the rice is hot and slightly crispy at the bottom.

Step 9

Taste and adjust seasonings if needed, adding more soy sauce or gochujang for extra flavor.

Step 10

Remove from heat and serve immediately. Top each portion with a fried egg, if desired.

Step 11

Garnish with the green parts of the scallions, sesame seeds, and nori strips for added flavor and presentation.
