Ingredients

  • 12 ounces Penne pasta
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 5 cups Fresh spinach, chopped
  • 1.5 cups Roasted red peppers, chopped
  • 1 cup Heavy cream
  • 1 cup Grated Romano cheese
  • 1 cup Shredded mozzarella cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 2 tablespoons Fresh parsley, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish lightly with olive oil or nonstick cooking spray.

Cook the penne pasta in a large pot of salted boiling water according to the package instructions, until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant but not browned.

Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Stir in the roasted red peppers and cook for another minute.
