Ingredients

  • 4 pieces (6 ounces each) salmon fillets
  • 0.5 cup teriyaki sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic cloves, minced
  • 1 cup dry orzo pasta
  • 2 cups chicken broth
  • 3 cups baby spinach
  • 0.3333 cup parmesan cheese, grated
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons green onion, sliced (optional for garnish)
  • 1 teaspoon sesame seeds (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2

Brush both sides of the salmon fillets with the teriyaki sauce, reserving 2 tablespoons for later use. Place the fillets on the prepared baking sheet.

Step 3

Bake the salmon for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. During the last 2 minutes, brush the reserved teriyaki sauce over the salmon for an extra glaze. Remove from the oven and set aside.

Step 4

While the salmon is baking, heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

Step 5

Add the dry orzo to the saucepan and toast for 2-3 minutes, stirring frequently, until the orzo turns golden.

Step 6

Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the orzo is tender and most of the liquid is absorbed.

Step 7

Stir in the baby spinach, letting it wilt into the orzo. Add the parmesan cheese, butter, salt, and black pepper. Stir well to combine and remove from heat.

Step 8

Spoon the spinach orzo onto plates or a serving platter. Place a baked teriyaki salmon fillet on top of the orzo.

Step 9

Garnish with sliced green onion and sesame seeds, if desired. Serve immediately and enjoy!
