Ingredients

  • 4 cups All-purpose flour
  • 1.5 cups Warm water (110°F/45°C)
  • 2.25 teaspoons Active dry yeast
  • 1 teaspoon Granulated sugar
  • 1.5 teaspoons Salt
  • 0.5 cups Olive oil
  • 2 tablespoons Fresh rosemary leaves, chopped
  • 1 teaspoon Sea salt or kosher salt
  • 2 tablespoons Additional olive oil (for brushing)

Directions

Step 1

In a large mixing bowl, combine the warm water, yeast, and sugar. Let it sit for 5-10 minutes until the mixture becomes frothy.

Step 2

Add 2 cups of the flour, the salt, and 0.5 cups of olive oil to the yeast mixture. Stir until the batter is combined.

Step 3

Gradually add the remaining flour, 1/2 cup at a time, mixing as you go. Once the dough comes together, turn it out onto a lightly floured surface.

Step 4

Knead the dough for about 6-8 minutes until it is smooth and elastic. Add a little more flour if the dough is sticky.

Step 5

Place the dough in a greased bowl, cover it with a clean kitchen towel, and allow it to rise in a warm place for 1 hour or until it doubles in size.

Step 6

Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.

Step 7

Punch down the risen dough and transfer it to the prepared baking sheet. Press and stretch the dough into a rectangular or oval shape, about 1/2 inch thick.

Step 8

Using your fingers, make small indentations all over the surface of the dough.

Step 9

Brush the dough with the additional olive oil, then sprinkle the chopped rosemary and sea salt evenly over the top.

Step 10

Bake the focaccia in the preheated oven for 20-25 minutes or until the top is golden brown and the bread sounds hollow when tapped.

Step 11

Remove the focaccia from the oven and let it rest for 5-10 minutes before slicing and serving.
