Ingredients

  • 4 pieces Chicken breasts, boneless and skinless
  • 0.5 cup All-purpose flour
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cups Cremini or button mushrooms, sliced
  • 2 cloves Minced garlic
  • 1 cup Marsala wine
  • 0.5 cup Heavy cream
  • 0.5 cup Chicken broth
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap or parchment paper. Pound them to an even thickness of about 1/2 inch.

Step 2

In a shallow dish, combine the flour, salt, and black pepper. Dredge each chicken breast in the flour mixture, shaking off the excess.

Step 3

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 4

Add the remaining olive oil and butter to the skillet. Once melted, add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until the mushrooms are browned and softened.

Step 5

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 6

Deglaze the skillet by pouring in the Marsala wine. Use a wooden spoon to scrape up any browned bits from the bottom of the skillet. Allow the wine to simmer for 2-3 minutes to reduce slightly.

Step 7

Add the heavy cream and chicken broth to the skillet, stirring to combine. Bring the sauce to a gentle simmer and cook for 5-7 minutes, or until the sauce has thickened slightly.

Step 8

Return the chicken breasts to the skillet, spooning the sauce over them. Simmer for an additional 5 minutes to ensure the chicken is heated through and infused with the sauce.

Step 9

Garnish with fresh parsley and serve immediately with your choice of pasta, mashed potatoes, or steamed vegetables.
