Ingredients

  • 2 heads Romaine lettuce
  • 2 medium Carrots
  • 1 inch piece Fresh ginger
  • 3 tablespoons Orange juice
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 tablespoon Honey
  • 1 teaspoon Soy sauce
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Sesame seeds
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes

Directions

Step 1

Rinse the romaine lettuce and pat dry. Chop into bite-sized pieces and set aside in a large salad bowl.

Step 2

Peel the carrots, and grate them finely or chop into chunks if using a blender or food processor.

Step 3

Peel the ginger and finely grate it or chop into small pieces if using a blender or food processor.

To prepare the carrot ginger dressing, combine the grated carrots, grated ginger, orange juice, rice vinegar, sesame oil, honey, soy sauce, olive oil, salt, and black pepper in a blender or food processor. Blend until smooth and creamy. If the dressing is too thick, add a teaspoon of water at a time until the desired consistency is reached.
