  • 1 cup cucumber, diced
  • 1 medium red bell pepper, diced
  • 0.25 cup red onion, finely chopped
  • 0.5 cup fresh parsley, chopped
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup toasted almonds, slivered
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the quinoa thoroughly under cold water in a fine-mesh sieve to remove its natural bitterness.

Step 2

In a medium saucepan, combine the quinoa, water, and 1/2 teaspoon of salt. Bring to a boil over medium-high heat.

Once boiling, reduce the heat to low and cover the saucepan. Let the quinoa simmer for 15 minutes, or until all the water is absorbed.
